The Eve before Day 1

I have spent the last several years worrying about everyone's health......except mine. While vegetarian, I have to confess that I indulge in too much coffee as well as other processed items that are not healthy for me. This is about to change. I have the knowledge, I have the culinary experience, and now I have the desire to challenge myself to step away from processed foods, dairy, coffee, and other "poisons" in search of what it feels like to eat clean.

To help encourage my success I have acquired and learned to use a high power juicer. This will allow me to juice organic veggies and fruits for nutrition. I am excited about sipping juices for breakfast as I have never been one for much food in the morning.

I went to the store and bought all the veggies and fruits I will need to complete the week's challenge. I spent the afternoon washing, prepping, and sorting my veggies so that they will be easy to prepare for meals.

About my challenge:

I am using the Raw Food Life Force Energy book by Natalia Rose as a guideline for my 21 days. Here there are meal plans and recipes that make it easy to stay dedicated to the challenge. My only exceptions are that I am not using any of the dairy she lists or any of the meat/fish containing meals.

I selected this method to follow as it allows for 100% raw if you want, or mostly raw with some cooked dishes. I have to admit that I do like warm food, especially in the winter, so I am happy that I can have the flexibility.

My refrigerator is full of clean fresh fruits and veggies just waiting for the challenge to start!
